Ingredients

  • 12 ounces orecchiette pasta
  • 12 ounces Swiss chard or mustard greens, stemmed
  • 12 ounces baby spinach leaves
  • 1 (15-ounce) can garbanzo beans, rinsed and drained
  • 2-3 tablespoons olive oil
  • 2-3 garlic cloves, minced
  • Red pepper flakes (optional)
  • Salt and pepper to taste
  • Ricotta salata cheese for topping

Preparation

  1. Boil pasta in salted water for 8-10 minutes until tender but firm. Reserve 1 cup pasta water before draining.
  2. Heat olive oil in a large skillet. Add garlic and red pepper flakes if using.
  3. Add chard or mustard greens and cook until wilted. Then add spinach and cook until wilted, stirring occasionally.
  4. Stir in garbanzo beans to warm them through.
  5. Add pasta to the skillet and mix. Add some reserved pasta water if mixture seems dry.
  6. Season with salt and pepper. Top with crumbled ricotta salata before serving.
