Ingredients

  • 1 rotisserie chicken, shredded
  • 1 can (15 oz) black beans
  • 2 cups shredded cheese (Mexican blend works well)
  • 1 jar (16 oz) enchilada sauce
  • 8-10 corn or flour tortillas
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: sour cream, diced avocado, chopped cilantro

Preparation

  1. Preheat your oven to 375°F.
  2. Mix beans, 1 cup cheese, and oregano in a bowl.
  3. Add shredded chicken and season with pepper.
  4. Spread half the enchilada sauce on the bottom of a baking dish.
  5. Layer tortillas (you can slice them or use whole) and top with chicken mixture.
  6. Pour remaining sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden.
