- 3 large egg yolks
- 1/4 cup white sugar

- 1 cup heavy cream

Preparation
- Preheat the oven to 325°F.
- Whisk the egg yolks with the sugar until smooth.
- Heat the heavy cream until it is just about to simmer, then remove it from the heat.
- Slowly add the warm cream to the egg mixture, whisking constantly.
- Stir in the vanilla extract.
- Pour the mixture into the ramekins.
