Serving Size

  • Serves 4 people, with 1 small ramekin each

Ingredients

  • 3 large egg yolks
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons white sugar (for topping)

Preparation

  1. Preheat the oven to 325°F.
  2. Whisk the egg yolks with the sugar until smooth.
  3. Heat the heavy cream until it is just about to simmer, then remove it from the heat.
  4. Slowly add the warm cream to the egg mixture, whisking constantly.
  5. Stir in the vanilla extract.
  6. Pour the mixture into the ramekins.
  7. Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins.
  8. Bake for about 35 minutes, until the custard is set but still slightly jiggly in the center.
  9. Let it cool until it is about room temperature, then refrigerate the ramekins for at least 2 hours.
  10. Before serving, sprinkle the remaining sugar evenly over the tops and carefully use a kitchen torch to caramelize the sugar until golden brown.
