The recipe is straightforward and uses store-bought puff pastry, which keeps things easy and convenient. A sprinkle of cinnamon and sugar gives each palmier a delicate flavor, making them a great choice for afternoon tea or an after-dinner dessert.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1/3 cup white sugar
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cardamom (optional)

Preparation

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Mix the sugar, cinnamon, and cardamom in a small bowl.
  3. Sprinkle half of the spiced sugar on a clean surface.
  4. Lay the puff pastry sheet on the sugar.
  5. Sprinkle the rest of the sugar mix on top of the pastry.
  6. Gently roll out the pastry to press in the sugar.
  7. Fold the two long sides toward the middle, then fold again so that the folds meet in the center.
  8. Slice the pastry into 1/2-inch pieces and place them on a baking sheet.
  9. Bake for 18 minutes, turning them over halfway, until golden and crisp.
  10. Let the palmiers cool before serving.
