Ingredients

  • 4 skin-on salmon fillets (5-6 ounces each)
  • 1¼ pounds small red potatoes, halved or quartered
  • 2-3 tablespoons butter
  • 3-4 garlic cloves, minced
  • 1 cup water
  • Fresh greens (spinach or kale work well)
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation

  1. Place potatoes in the Instant Pot with 1 cup water, 2 tablespoons butter, salt, and pepper.
  2. Position salmon fillets on top of the potatoes.
  3. Cook on high pressure for 3 minutes for fresh salmon (adjust for frozen).
  4. Quickly release the pressure when done.
  5. Add your greens and cover for 2 minutes to steam them.
  6. Serve hot with lemon wedges.
